Low Carbohydrate Quiche Recipe

This recipe is a keto favorite for breakfast. Prepare ahead of time. Serve for breakfast or snack.

The Ingredients...

  • 6 eggs
  • 1/4 cup heavy (whipping) cream
  • 8 links breakfast sausage
  • 1 cup shredded cheddar cheese
  • 4 tablespoons olive oil or butter
  • 1 can mushrooms
  • 1/2 onion
  • 1 cup frozen spinach
  • 2 tablespoons flax meal

The Prep...

Heat the oven to 375°F.

In a single medium size pan...

  • Sauté mushrooms in olive oil or butter.
  • Dice onion - add to pan.
  • Defrost breakfast sausage - cut into small pieces - add to pan.
  • Add frozen spinach and flax meal - heat with mixing until thawed.
  • Add salt to taste.
  • Remove from heat.

In a large bowl...

  • Beat eggs.
  • Mix in heavy cream and cheddar cheese.
  • Mix in the cooked ingredients from pan.
  • Pour and level the mixture in a large buttered baking dish.
  • Bake for 40 minutes.
  • Let cool and cut into 16 portions.

Each portion has approximately...

  • 1 gram of carbs
  • > 5 grams of protein
  • > 10 grams of fat

In percentages...

  • 5% carbohydrate
  • 30% protein
  • 65% fat
